The Mexican Food Revolution

Mexican cuisine has greatly influenced American food for centuries. However, in the latter half of the 1900s, Mexican-inspired foods became mainstream in the US. Dishes like tacos, tortillas, and enchiladas are now commonly found in households and restaurants across the country. The popularity of Mexican cuisine has even pushed traditional American foods, like burgers and fries, to incorporate Mexican flavors and ingredients. The impact of Mexican cuisine on American food culture has been significant and continues to thrive in the culinary world.


People ground corn using this electric molino, corn mill, to make masa, dough, for tortillas and tamales. She placed balls of masa onto the conveyor belt, hand-cranked them through the rollers of this tortilladora, pressed, and then dropped them onto the propane-fired comal, griddle (not shown), to cook.
